1990sTenuta Cavasecca
Old olive trees,
and a family looking after them.
Cavasecca’s family story begins in the 1990s, when Antonio and Lucia began caring for an olive estate in Sicily. In 2017, the next generation, Dario, joined olive growing.
Their work also grew into sharing the place and its agricultural heritage. A single-varietal oil such as Siracusana offers a direct way to discover the character of one of its olives.

- SIRACUSANA
An oil expressing Siracusana/Zaituna olives
LE CARACTÈRE
Almond and artichoke notes,
across a warm dish.
Siracusana is an extra virgin olive oil from the Siracusana/Zaituna variety. The producer describes almond and artichoke notes with a persistent character. A single-varietal oil offers a focused way to explore one olive’s expression.
Try a little over beans or vegetable soup. Adding it after plating, rather than cooking it into the pot for a long time, lets you notice it in each spoonful. Country bread makes a useful companion.

LA SICILE À TABLE
Discover olive aroma with a slice of bread
Cavasecca connects Siracusana with the character of the Zaituna olive. The producer describes notes recalling artichoke and almond, with bitterness and a peppery finish. A small piece of plain bread offers a simple way to explore those tasting notes.
Our grain breads and olive oils invite you to enjoy each ingredient’s character. Begin with bread and oil, then add cheese or vegetables one at a time to explore the pairing.
UN GESTE SIMPLE
Discover its character over bean soup.
A simple serving idea from BORISSOU PARIS. Add a little, taste and make the meal your own.
Cook white beans and vegetables until tender, mash some of them and adjust with water or stock.
Season and ladle into a bowl. Taste a spoonful before adding the oil.
Drizzle on a little Siracusana and taste again. Serve bread alongside for a contrast with the soft beans.

UNE AUTRE ASSIETTE
Oil between beans and vegetables.
Finish cooked white beans and tomato with a little Siracusana oil. The mild beans and tomato’s acidity let a small amount make a difference.
The producer describes almond and artichoke notes. Explore those as flavour cues rather than a test, tasting a little with mild food or as a finish for bean soup.
- Drain the beans before combining with tomato.
- Adjust the final seasoning after adding oil.
- Add vinegar only if you want more acidity.

LE PAIN À CÔTÉ

Handmade Petit Épeautre

Just bread and oil
Dip campagne or baguette in a little oil. Try it without other sauces first, then adjust the amount to enjoy the oil's character.
Over a warm bowl of soup
Ladle vegetable soup into a bowl and finish with a little oil. Taste a spoonful before adding more, and serve bread alongside.
With potatoes and beans
Add a little to potato purée or cooked beans just before serving. Taste the dish first, then adjust the oil to explore how it changes each bite.
BON À SAVOIR
Good to know.
What is the simplest first tasting?
Taste a little with plain bread, then try it on warm beans or potatoes to compare how the food changes the impression.
How should I balance bitterness or pepperiness?
Start with less and taste it with softly cooked beans or vegetables. Explore the balance in a dish rather than tasting a large amount alone.
