01 / LE PAIN

Break bread at the everyday table

Made with French T65 flour and salt, it focuses on bread itself. Cut it lengthwise for ham and cheese, slice it thinly for preserves, or break it into pieces beside warm soup. The way you cut a baguette changes how it fits the meal.

France’s artisanal know-how and culture of baguette bread were inscribed on UNESCO’s Representative List of the Intangible Cultural Heritage of Humanity in 2022. For BORISSOU PARIS, which began in Paris, baguette also belongs to everyday dining. Add butter or preserves, place it at the centre of the table and share.

02 / LE PAIN

A long loaf for everyday eating.

Cut short pieces for a meal or split a length to fill: the baguette’s shape gives it different uses at the table.

Tradition centres on bread itself. Explore its scoring, baked colour and crumb without a topping taking the lead.

03 / LE PAIN

Where the scoring opens.

Scoring and the baked openings give a baguette its familiar appearance. Handmade shaping brings natural variations.

Chef Bae’s experience in Korea, Japan and France informs our attention to familiar breads, including their finished form and crumb.

04 / LE PAIN

A tartine that includes the crumb.

The slice reveals pale crumb and air pockets beneath the crust. Include both in a bite.

Try a breakfast tartine with thin layers of butter and strawberry preserve, or serve plain pieces with soup.
